Our Wines…
A dedicated focus on 3 grape varieties that grow exceptionally well here in Niagara. Chardonnay, Pinot Noir and Gamay. Our wine program includes small batches made to reflect a sense of place and showcase the exceptional vineyard the fruit is grown in.
Rebel Wines
Every year we produce a Rebel Chardonnay and Rebel Pinot Noir. These wines are “made in the vineyard”. Our winemaking approach is respectful of harnessing the primary fruit characters we get from the grapes in the vineyard without too much intervention in the cellar. Often the Rebel wines are a blend of wine aged in stainless and neutral French Oak Barriques. The idea is to make a wine that is bright, fruit forward, and easy drinking.
Renegade Wines
Some vintages we decide to play with blends and make a wine that is fun and expressive or find different ways too process and ferment our grapes that are a departure from our classical styles of Pinot Noir and Chardonnay we make. These wines are often blends with other varieties that bring a fresh and youthful feel to the finish. Expect the unexpected.
Civility Chardonnay
Our Civility Chardonnay is a reserve wine that begins with fruit quality in the vineyard. We then build the wine through ageing and winemaking techniques in the cellar to create length and complexity. The Civility Chardonnay is barrel fermented and barrel aged in new French Oak Puncheons. Our winemaker will stir the barrels (bâtonnage) to integrate the lees into the wine, creating a richer fuller finish. Always bottled with 0g/L of residual sugar and unfiltered. A beautiful expression of a full bodied Chardonnay.
Incivility Pinot Noir
Our Incivility Pinot Noir is a reserve wine that generally reflects the best barrels of one particular vintage. Often this wine begins with whole cluster wild fermentation and is then aged in a mix of barriques and puncheons. Every year our Incivility is guaranteed to be a well thought out barrel blend showcasing the complexity and elegance of Pinot Noir grown on our Estate. Bottled unfiltered with 0g/L of residual sugar.
Tenacity Wines
Our Tenacity wines are a special select reserve wine that is only made in exceptional vintages. This wine can be a Chardonnay or Pinot Noir. Often the wine is a single barrel selection of a wine that has stood out from the moment it entered the cellar to when we begin the blending trials before bottling. We are very particular about the quality of a Tenacity wine as it must showcase the most complex and well rounded version of the grape variety and best expression of a vintage. A wine worth ageing in your cellar and enjoying on special occasions.
